I agree with the others, your oil temp should not be that high. I would expect it to be close to coolant temp driving normally or slightly above like ttz'in mentioned. Expect higher if you are tracking the Z. It is hard to get a good ground signal through the sandwich adapter because of the anodizing and relying on thread contact only. Two wire senders don't have this issue because they have a dedicated ground but single wire senders rely on the ground through whatever they are threaded into. You shouldn't have any issue with it being screwed into the sandwich adapter as that is a very common spot for oil temperature besides the pan itself.
